I'm sure this question has been asked a million times, but what's the biggest tire I can fit on a stock Wrangler X JK without rubbing? Can anyone recommend a good tire/rim combo for the mud up in these here parts, and a good place to get them? Thanks.

This is not a simple question.
It depends, do you need a tire for use on ad off-road (JP magazine has a good article on tires this month)? Are you going to get a lift kit? What kind of gears are you running?
The simplest answer is that Boggers (Interco Tires) cannot be beaten in the mud here, but it is not a gear road tire. A set of beadlock rims is the best for airing down off-road giving maximum traction.
For use on road year round with occasional off-road use, any MT tire will do (Mickey Thompson MTZ, Procomp extreme MT, and BFG KM2 MT.
If you have the 3.21 gears I would not go bigger than 33inch tires (255/75/R17 - Rubicon spec is the most sensible), but you would have loss of power on the highway. You would be able to get around on most of the trails here no problem if you pick you line. 3.73 gears you could go up to 35 inch, but the same power loss is still going to happen.
Without a lift all tires bigger than 255/75/R17 (Rubicon tires) would rub. As I have discovered rubbing is not such a bad word and is easier to correct than you might think. Wheel spacers would help and there is so much plastic on the stock bumpers that they could easily be trimmed. A body lift is inexpensive and will get a little more clearance.
Rims - personal choice really. Check QuadraTec for examples, just don't buy from them rims are too heavy (northridge4x4.ca or NSOR.com - my recommendation).
Take your time and do the research. Decide on what you will use it for. Check the JK forum website (www.jk-forum.com) for examples what other people have done. There are threads for stock jeeps, “show your 33s”, “show your 35s” and “who is part of the 37inch tire club” that focus on tire size.
My goal is 35 inch tall tires (or 37inch if I re-gear) for my 08 Rubicon, but I have a 3.5inch suspension lift and a 1 inch body lift. I have already replaced the front bumper and added a winch – which was the best upgrade to this point. If you are only going to go offroad part time look for cheap set of Rubicon tires and rims on Ebay or Kijijij to start and go from there.

Are you going to run these on the street also? If the answer to that question is no, then get a set of Boggers, Iroks, TSL's etc and you will do fine. (Boggers are definitely the king of mud tires). If the answer is yes, then it gets a bit more complex. Do you do a lot of highway driving? Do you care about road noise and performance in snow and ice? There are lots of intermediate mud tires like BFG's, Procomp, Mickey Thompson, etc that are a decent balance between off-road and on-road performance.

Man, I gotta stop reading JK forums! Thanks for the replies guys. I plan on keeping my stock rims and wheels as backups, either for long road trips or for winter months. My thoughts were to get a set of rims and tires for off-roading, expedition, and around town driving. I'm thinking of 15" rims, probably just the Cragar soft 8, and then some tires. Not sure what tires though. I'm leaning towards the go big or go home, since I'll have the stock wheels as back-ups. Is it usually this muddy all year? Also the more I read the forums the more I want a lift kit too... damn! Is it worth it? Will it void the warranty (doesn't sound like it). At the end of the day, is there really any point of going with a 33" tire over a 32" tire? Probably not much difference.
Can't wait for my jeep to arrive!
